At Coupette, every detail begins with a question of intention. The way light falls across the bar, the weight of a coupe in the hand, the single rock that keeps a serve cold without diluting its character — none of it is accidental.
This is the philosophy that has guided us since 2017: that French finesse is not about formality, but about care. Care for the grower who supplies our apples, for the season that shapes the menu, and for the guest who has chosen to spend an evening with us on Bethnal Green Road.
We hope this story offers a small window into that world — and an invitation to experience it in person. The best way to understand a cocktail, after all, is to drink it.
